UHT (Ultra High Temperature) milk is milk that is subjected to high temperature before being packaged into a carton box. The purpose of this procedure is to kill pathogens and thus prolong the shelf life of the cow’s milk. The milk is then bottled into cartons under aseptic conditions and packed hermetically, what gives it a long expiration date. After opening, the milk should be stored in the refrigerator. This is because the sterilization process does not ensure the sterility of the milk permanently.
